Happy Platinum Jubilee, Your Majesty

Like millions of others, I've been enjoying televised festivities of Queen Elizabeth's Platinum Jubilee. The cheering crowds, the colourful uniforms, the beautiful prancing horses, the gorgeous hats and outfits, the wonderful concert and special effects -- all of it! The Brits have done themselves proud. And well done, Ma'am, for producing a marmalade sandwitch from your purse in your cute skit with Paddington Bear.  Goodness knows you've needed that sense of humour over the years.

This celebration and grand party is just what we needed after turmoil with COVID and the ongoing war in Ukraine. Even the weather cooperated with sunny skies.

Inspired by Doug, from ApacheDug's Teepee, I thought I'd toss in a simple salmon loaf recipe I like.  It's one my sister uses and I must say, her's is much tastier than mine. Likely because she uses whole dairy milk while I use unsweetened soy milk. 

 

Salmon Loaf

  • 1 213 g can red (sockeye) salmon, undrained and mashed
  • 1 medium onion, minced
  • 2 eggs, slightly beaten
  • 3/4 cup crushed soda biscuits
  • 2/3 cup milk
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon summer savoury

Preheat oven to 350 degrees F.

Combine all ingredients and pour into a buttered loaf pan. Bake for about 40 minutes (or until firm in center).

Serve with a topping of tartar sauce. 

 

For a zestier flavour, you could add a teaspoon of horse radish to the mix. You could also make individual patties and fry them in a little butter. Or bake for 20-25 minutes in a muffin tray. Cold, sliced salmon loaf is a nice sandwich filling. It can also be sliced and frozen for up to three months. Versatile, economical and healthy.

 

I like to pair salmon loaf with creamed peas.

Simple ingredients for a simple meal.

So nice to have fresh lettuce for the picking.

Secondly, I am honored to be mentioned on your blog, thank you! Your salmon loaf sounds absolutely delicious and I love your plating.     1. I just know you'll effectively jazz up that basic recipe, Doug. As you can see, I go heavy with the side veggies and generous with the salt (I use potassium chloride) and pepper shakers. I should have included the YouTube Link to the Queen/Paddington Bear skit. Will do that now. As always, Doug, I sure do appreciate your encouragement. And inspiration!

    Your dinner looks scrumptious. We have been vegetarian for thirty years but I always did like canned salmon.
    Ellie Mae looks quite happy with her breakfast selections.
    Your garden photos are beautiful. I planted mixed lettuce right into our veggie garden instead of planter boxes as I usually do with no hope of it surviving the various critters around here but it has!
    Do you have any peonies? They seem to be so gorgeous right now.

    1. Hi Robin! Kudos to you for being vegan for thirty years. Wow! I ate only whole foods/plant based for two and a half years. I loved the food and felt energetic but despite snacking on plenty of fruit and nuts, I was just losing too much weight. So I've now added eggs and fish back into my diet and am slowing gaining back a little padding. My body has always leaned to the scrawny side. I always used to plant my lettuce in the garden up until last year. The planter route seems to work best for me. Peonies? I've white ones and pink ones and red ones which are just starting to open. No doubt I'll be showing them off.

    2. I would love to see your peonies! Maybe you have mentioned this Florence and I have forgotten, do you still keep bees?
      No worries about me being on the scrawny side, I do love to bake! We do eat eggs and dairy too.

    3. I kept and loved my honey bees for eleven years, Robin. A couple of years ago they were poisoned from local agricultural pesticides. I notice there are not as many native bees here now either. Europe has banned neonic pesticides but sadly North America has not.

  3. That skit with the Queen and Paddington was so funny. You gotta love her or at least I do and I didn't know Paddington was so cute.
    That recipe looks good and I will probably go with frying the patties.

    1. I think I'll try the frying route next time as well, Patti. My scrawny old body could use the extra calories! And some horse radish for a little more kick. Elle Mae also gets two or three smoked oysters a day and some shavings of cheese. And she loves roast chicken. She won't eat regular grocery store canned cat food brands. No danger of her running away from home!

  5. Lovely post, Florence. Thanks for the reminder about salmon loaf. Mom used to make one just like that and it tasted so much better than when I have tried it. She would sometimes mix mashed potatoes with the salmon, form into patties and fry them with butter, onions and scrunchions- very tasty but the latter something I never use cause of the fat! Nice to have growing things now isn't it. I'm loving how every day my walk in the garden shows something new. Of course, we watched the Platinum Jubilee with great interest. Thought the Queen with Paddington was a brilliant idea. Enjoy your weekend!

    1. Hey, mashed potatoes!!! What a good idea! Will try that! Also frying would certainly bump up the flavour. Will be interesting to see what happens to the monarchy when Queen Elizabeth is no longer head of it. I do love to watch the pagentry of it all. My great uncle was a mounted guard when her Dad reigned.

  6. Loved the skit with Queen Elizabeth and Paddington! And your lettuce looks so wonderful. I just planted some veggies and herbs in a raised bed - but too late here in Texas to plant lettuce - but will in the Fall! And Ellie Mae is a really pretty cat...
